Congrats to Nashville's own Prince's Hot Chicken Shack! The city's most notorious restaurant made Eater critic Bill Addison's list of 38 essential restaurants in America. In his write up, Addison said of Prince's and the Hot Chicken craze:
But no matter how many people succumb to the masochistic pleasures of capsaicin and the endorphin rush that follows, or how many restaurant groups fashion their own variations, credit for the dish should — and will — always go straight back to the business that made it famous.
